Sneak a Snack Sunday: Chocolate Mousse Fruit Dip

Sometimes a day is just a pain

Sometimes you just need a hug.

Sometimes all you need is a break.

Sometimes all you need something sinfully rich, smooth, and decidant.

And sometimes the last thing you need is to add one more stress by having to really work for that decidant treat.

When I want to scream I reach for chocolate and heavy cream. This is not the mousse recipe that you got from your Julia Child cook book and you will not spend hours in the kitchen over the stove. This is a cheat mousse! It is a naughty little fruit dip that disguises itself as a haughty taughty mousse.

This is the type of recipe that you can put in the middle of a fruit tray for a pot luck.
Serve it in pretty delicate ramekins with a strawberry garnish at a dinner party.
Freeze it in little servings as a frozen treat for the kids.
Or just keep it in your fridge for when you need a quick and creamy chocolate treat next to a container of clean and precut fruit ready to dip.

It is the perfect level for a stressful day. I whips together but still gives you a few minutes of relaxing and mindless kitchen time!

Chocolate Mousse Fruit Dip

2 1/2 Cups Heavy Cream
1 Cup Semi Sweet Chocolate Chips
1 Tsp Vanilla

Fit a glass bowl inside a sauce pan filled with boiling water (or a double boiler). Pour chocolate chips into bowl and stir as the chocolate melts.

Set aside to cool

In a big bowl whip up the cream with an electric mixer. Cream needs to be whipped up to creamy peaks.  If your kitchen is hot you can set the metal beaters in the freezer before hand to help. It also helps if cream is refrigerator cold.

Whip in vanilla.

Fold in chocolate with spatula.
